The amount of meat yielded from an animal can be generally calculated based on some approximations of meat, bone, and hide ratios relative to the average example of that animal. Obviously not all animals are similar in yield, there is far more meat on a steer than on a deer or goat.
Although it is impossible to calculate exactly how much meat an animal will yield before hand, and it will vary depending on the body composition of the particular animal, these calculators can get you a reasonably close approximation of what you can expect.
