The Math / Science

Alpha Acid units are a measurement of Hops equal to the weight in ounces multiplied by the percent of Alpha Acids. Alpha Acids derive from hop plant and cause the hop bitterness. Alpha acids are produced in beer when hops are added to the boiling wort. The amount of bitter flavor produced by the hops is dependent on the length of time the hops are boiled.
