Classic Potato Salad Recipe
Ingredients:
- 2 pounds of potatoes (Yukon Gold or red potatoes work well)
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 2 tablespoons sweet relish
- 1 teaspoon sugar
- 1/2 teaspoon salt (more to taste)
- 1/4 teaspoon black pepper
- 1/2 cup chopped celery
- 3 celery stalks
- 3 hard-boiled eggs, chopped
- 2 tablespoons fresh dill or parsley, chopped (optional)
Instructions:
Prepare the Potatoes:
- Peel the potatoes (if desired) and cut them into 1-inch cubes.
- Place the potatoes in a large pot and cover them with cold water. Add a generous pinch of salt.
- Bring the water to a boil, then reduce the heat and simmer for about 10-15 minutes, or until the potatoes are tender when pierced with a fork.
- Drain the potatoes and let them cool completely.
Prepare Ingredients:
- Dice the hardboiled eggs and celery stalks and set aside.
- In a large mixing bowl, whisk together the mayonnaise, Dijon mustard, sweet relish, salt, onion powder and black pepper until smooth.
Combine Ingredients:
- Once the potatoes are cool, add them to the bowl with the dressing.
- Gently fold in the chopped celery and hard-boiled eggs.
- Mix until all ingredients are well coated with the dressing.
Chill:
- Cover the bowl with plastic wrap and refrigerate for at least 1-2 hours before serving. This allows the flavors to meld together.
- Taste and adjust the seasoning with more salt and pepper if needed.
Garnish and Serve:
- Before serving, garnish with fresh dill or parsley if desired.
